At the heart of it all, is Director of Food and Beverage, Andrew McGie. His 20+ years in the industry and international experience, from the UK to Abu Dhabi, Portugal and beyond, have shaped a menu rooted in tradition and bold, honest flavour. Inspired by his early love of food and the rituals of cooking, Andrew brings deep respect for Spanish ingredients and techniques to every dish.
